Vicky’s SUPER summer salad
Courgette Salad with Goats cheese, Lemon Zest & Mint
We just can’t get enough of this one in our house. At Spirohealth we love eating healthy and giving the body the best chance to be balanced.
1 tsp olive oil
2 yellow courgettes sliced lengthways into thin strips (I use a veg peeler for this)
Salt & Pepper
Handful of young mint leaves
40g goats cheese, crumbled
Zest of a lemon
Squeeze of lemon juice
Rocket leaves to serve
Heat the oil in a ridged pan & griddle seasoned courgette strips a few at a time, turning once, until they are griddled well & properly striped. Serve topped with goats cheese, lemon zest & a squeeze of lemon & a side of rocket leaves.
